The holidays are coming and this Low Carb White Chocolate Cereal Snack Mix is a wonderful treat. It is an easy sweet snack mix to whip up in under 15 minutes. A fantastic addition to a candy platter or party bowl that everyone will love, even the kids!
Low Carb White Chocolate Cereal Snack Mix!
I’ve always loved the cereal snack mixes that we usually see popping up at gatherings around the holidays. My sister-in-law, Teri, often brings one called Reindeer Chow and I can say, with my head hung in shame, that I’ve rarely left much of anything for those poor reindeer.
It’s hard to resist, so I try to avoid it when I could, but man I have missed it. If only that sugary high-carb snack mix could be made low carb friendly, right? Well, guess what? It can!!
Recently I partnered up with the Magic Spoon cereal company. You may have seen my Instagram stories or post, but if not you should head over there later and check them out.
The Peanut Butter Cereal that I was working with is pretty tasty and my 13 year old loved it. So I’m glad there’s a better option for cereal for him. He could polish off a box in one sitting if I don’t watch him!
I like it with almond milk, but as soon as I tasted it, my mind started churning and I knew that my low carb holiday snack mix dreams were about to happen! I started testing and figuring things out that same day and mixed it up.
This is my favorite low-carb snack mix I’ve ever put together for you guys. This simple mix is reminiscent of the traditional sweet snack mixes that are made from Chex cereal or popcorn, but I’ve swapped those higher carb options out for Magic Spoon Cereal and a few other tasty ingredients.
What Ingredients Go Into The Low Carb Cereal Snack Mix?
Unlike some snack mixes, this one only has 5 ingredients and is extra simple to mix up. The most complicated part of this snack mix will be getting your hands on the Magic Spoon Cereal.
Sadly, I haven’t found it in any stores yet, so it has to be ordered online. You can find the Peanut Butter Flavor that I use in this recipe and their other flavors over at Amazon. You can check them out here in my affiliate store if you’re interested.
If you don’t have access to the Magic Spoons cereal, any Keto Cereal you can pick up at your local store will work for this recipe. All of the other ingredients are easily purchases at your local Walmart as well. Let’s look at what you’ll need to get this mixed up for your next party.
Here’s What’s Needed:
- Keto or Low Carb Cereal
- Sugar-Free White Chocolate Chips
- Natural Peanut Butter
- Sliced Almonds
- almond milk
- Coconut Oil
- erythritol/stevia blend sweetener, powdered
How Do You Make A Low Carb White Chocolate Peanut Butter Snack Mix?
Not only is this snack mix delicious and perfect for holiday snacking, but it is also one of the easier desserts you’ll make this season. With only ten minutes and a few steps you’ll have it mixed up and ready to go into the freezer to set up.
This means you’ll be ready to snack on this cereal mix in about an hour. If you ask me, that is pretty awesome. Let’s take a look at the three steps you’ll follow to make this amazing snack.
Step 1: In a very large bowl, mix the cereal and sliced almonds together. If you want to add any other items to your snack mix this would be the time to mix those in also.
Step 2: In a microwave-safe bowl melt the white chocolate chips, coconut oil, peanut butter, and almond milk. This may take a couple of minutes, but you’ll need to stop and stir the chocolate mixture every 30 to 45 seconds. Continue this until everything is melted and has no lumps.
Step 3: Pour the melted chocolate peanut butter mixture over cereal and almonds in the bowl and stir until all of the cereal is coated. Once it is mixed well pour the snack mix out onto a lined baking sheet and spread it out evenly.
Place the sheet of snack mix into the freezer to set. This step will take about 45 minutes to an hour. Once the chocolate is set on the snack mix, pull it out and break it into smaller pieces.
How Do I Store The Low Carb White Chocolate Peanut Butter Snack Mix?
You’ll need to store this snack mix properly to ensure it stays fresh and delicious. If you are storing this recipe for a longer period of time, say a week or more, then I would recommend that you store your snack mix in an airtight container in the refrigerator.
This yummy cereal snack mix will last up to 1-2 weeks if stored in the fridge or even longer if you store it in the freezer. It’s great to make up ahead and have it ready to pull out when needed.
When you know the snack mix will be eaten fairly quickly, like a day or two, it is fine to leave it out on the counter at room temperature. Again, make sure you use an airtight bowl with a lid so it doesn’t get stale.
With that being said, my favorite way is to keep it in the fridge for best results! I like the way it always stays crunchy when you store it in the fridge.
However, if you are serving this snack mix at your gatherings or a party, go ahead and leave it out on your serving table for people to graze on.
It will be totally fine. Just don’t leave it out in an overly warm room or near a heat source or the mix might get a little melty and sticky.
What Other Options Can I Add To This Snack Mix Recipe?
This simple five-ingredient snack mix is delicious just as it is and compared to the traditional snack mixes a serving of this comes in at around 5 net carbs per 1/3 cup. So not something you’d want to indulge in every day but definitely a great option for a holiday splurge.
If you would like to spruce this snack mix up a little more then here are some options that would be delicious in the mix, but keep in mind that for every ingredient you add in, the total carb count goes up, but again totally worth a special treat once in a while.
Additional Ingredients Options:
- Sugar-free Chocolate Covered Nuts
- Sugar-Free Atkins M & M’s
- Broken Up Pork Rinds, for the salty and sweet combo
- Macadamia Nuts
- Unsweetened Flaked Coconut
- An extra drizzle of sugar-free milk chocolate
