Toffee Almond Bites
My Toffee Almond Bites are the perfect sweet treat. These bite-sized candies combine the sweet taste of toffee with crunchy almonds and creamy dark chocolate.
Not only are these little candies tasty, but they are so effortless to make with an option to make them with no special ingredients.
I love to have recipes like these Toffee Almond Bites up my sleeve when I need candy but I don’t have a lot of special ordered ingredients on hand.
This recipe doesn’t require any special ingredients that are hard to find. So that is why I am thankful that this recipe calls for just 5 basic elements I can find locally.
Now, with that being said, let’s talk about Lily’s Chocolate Chips.
I am lucky enough to find and purchase Lily’s Chocolate Chips in a local store here in my town, but I know that for many they are hard to find locally and they can definitely be expensive.
No Special Ingredients Options
So in order to keep these to your basic and easy-to-find ingredients, I have a couple of suggestions.
Can’t find Lily’s chocolate chips, that’s okay, you can use any sugar-free chocolate chip that you enjoy.
If you don’t have chocolate chips, simply chop up 4 oz of 85% chocolate bar for the topping. I can get these bars at Aldi for the low price of 1.99!
Having made these a few times now and I can tell you that Hersey’s Sugar-Free Chocolate Chips, found at WalMart, also work wonderfully.
These were nice treats that I have used in the past when I was unable to find Lily’s locally.
Just remember that these have quite a bit of sugar and alcohol in them and are higher in carbs, so I like to limit how often I use them.
Lately, I have also been hearing some great things about the new Trim Healthy Mama brand of sugar-free chocolate chips.
However, I have not had the pleasure of trying them, so let me know in the comments below if you have tried them and your thoughts.
I have a feeling that no matter what route you take in choosing your chocolate you will enjoy these Toffee Almond Bites as much as I do.
These crunchy sweet bundles of goodness will surely help me be prepared more for Easter.
Who doesn’t need a backup plan with those pesky cream-filled eggs lurking about? Call me weak, but I sure do!
How Show I Store Toffee Almond Bites?
These little toffee bites are pretty shelf stable unless you keep your house pretty warm. During the hotter summer months or if you keep your home pretty warm, they might have a little bt of melting going on so I advise keeping them in the fridge if that is the case.
However, if you keep your home on the cooler side these will last okay on the counter for a day or two but then I advise moving them to the fridge to keep them longer.
I always keep mine in the fridge because I like the texture of them better that way as they tend to be a little softer and might fall apart if they get too soft on the counter.
Just make sure no matter where you store them that you keep them in an airtight container so they stay fresh longer.
Recipe Variation Ideas
- Not a fan of almonds, sub your favorite nut like macadamia, pecans, or even peanuts.
- Use one of the delicious Keto-friendly milk chocolate chips from Lily’s instead of dark chocolate. The carb counts may go up slightly but they will be delicious and a perfect match for those that might not enjoy dark chocolate.
- Sprinkle a like flakey sea salt on the top of each toffee bite before the chocolate sets for a glorious salty and sweet combo.
- Add some caramel or peanut butter extract to these bites for a flavor profile that can’t be beaten.
- Add some unsweetened coconut shreds for more of an almond joy type of candy. I love them made this way too!
Toffee Almond Bites|| Sugar Free and Low Carb
Crunchy and sweet nut clusters topped with melted sugar free chocolate. A perfect sweet pick me up treat.
Ingredients
Almond Bites
- 1 stick of butter
- 2/3 cup of THM Gentle Sweet or 1/3 cup of Pyure Sweetener
- 1/3 cup of heavy cream
- 1 tablespoon of butter
- 1 teaspoon of pure vanilla
- 2 cups of sliced or chopped almonds
- pinch of salt (optional)
Chocolate topping
- 4 ounces of sugar free chocolate chips
- 1/4 cup of heavy cream
Instructions
- Place the stick of butter, sweetener, and heavy cream into a saucepan over medium heat.
- Heat the mixture until all the butter and sweetener are melted and let it come to a small boil, stirring often.
- As the mixture boils it will slowly start to turn a golden brown color. Do not walk away from this toffee mixture as it will burn if you do not stir constantly at this point. The whole process should take about 10 minutes.
- When the toffee is nice and brown remove it from the heat and add in the vanilla and the tablespoon of butter and stir until the butter is melted.
- Add in the 2 cups of sliced or chopped almonds and combine to make sure all the almonds have some toffee sauce.
- Once combined add a spoonful to each mini muffin tin well that has been sprayed with cooking spray or greased well. Continue filling all the containers.
- Place the muffin tins into the freezer and let them chill for 30 at least.
- Once the Toffee Almond Bites are solid take a few minutes to loosen them away from the pan for easy access when you are ready to dip the bites in chocolate.
- To coat the Toffee Almond Bites add the sugar-free chocolate chips to a bowl and sit aside.
- Warm the heavy cream in the microwave until it is hot but not boiling, then pour in the heavy cream over the chocolate chips.
- Stir the chocolate chips until they are all melted and the cream is thoroughly mixed in. The chocolate should be silky and smooth at this point.
- When your chocolate is ready, dip a tsp or two onto the tops of each Toffee Almond Bites. Continue this step until every candy is topped with the chocolate
- Finally, when all the candies have been topped with the chocolate they need to be returned to the freezer to let the chocolate set.
- Store in an airtight container in the fridge.

Hi Jill, I haven’t worked with Swerve too much, but I have read that it is a little less sweet than Pyure, so maybe start with the 1/2 cup and go from there. Let me know how it goes!
