Instant Pot Cauliflower Mash
A few months ago I shared my Creamy Ham and Cauliflower Soup with you and it was one of the first recipes I created using my Instant Pot. Since getting my 5 QT Instant Pot for Christmas, I have used it every chance I get.
It really makes my dinner process a breeze throughout the week and I am excited to add this Instant Pot Cauliflower Mash recipe to my list of favorites.
I don’t try to hide the fact that sometimes I just don’t want to cook. Some may think that is crazy coming from someone who spends hours and hours creating recipes and posting them here, but it is true.
Don’t get me wrong, cooking is my happy place most days, and I love blogging about the recipes I create and feed my family, but there are days that I am exhausted from working my full-time job, and homeschooling and cooking are not so fun.
Oh and some days I am just plain lazy!
On those days, I don’t want to think about standing at the stove any longer than I have to! I like to find ways to save any time and steps I can while cooking dinner. No shame in that right?
This Instant Pot Cauliflower Mash recipe came to life on one of those exact days. I had worked an 8-hour split shift for my job and in the hours that I wasn’t working, I was writing out lessons plans for the next week and teaching my son his daily lessons.
So when it came around to dinner time I didn’t even want to cut up the cauliflower, much less stand over the stove and watch it as it boiled. Ever been there?
What’s You Need for this Recipe:
1 large cauliflower
1 cup of water
2 oz cream cheese
2 Tbsp of butter
1/4 cup of cream
1/8 tsp garlic powder
1/8 tsp onion powder
Seasoning to your tastes!
*Optional Toppings like green onions and shredded cheese
I just rinsed the large head of cauliflower, removed the tough stem and leaves, then placed the whole head in my Instant Pot. Yes, the whole thing went right into my pot on top of my little trivet that came in my Instant Pot!
I was serious when I said I was too tired to even cut it up, ha! So I just tossed that baby in the pot and prayed for the best. Thankfully I knew my family would eat it no matter how it turned out, but as you can see, it all worked out.
Once it cooked, I just added all the other ingredients into a bowl with the cooked cauliflower then mixed it up using a hand mixer and it was perfect and delicious. I actually got to sit and enjoy a hot tea while it cooked too. It was so nice!
I have not done it on the stovetop one time since this turned out and I don’t see myself going back to that method. Have you tried cauliflower in the Instant Pot, if so let me know how it turned out in the comments below!
