How To Make Keto Vanilla Pudding
A lot of us grew up enjoying instant puddings and those infamous pudding cups in our school lunches, but as we get older our waistlines and health issues let us know that those aren’t the best types of foods to be eating.
Those puddings, usually require high-carb thickeners to create that perfectly thick and creamy texture that all of us expect with pudding.
Not to mention all the extra filler crap and preservatives added into the boxes of pudding mix.
Since most thickeners are too carby for those of us trying to lose weight or live a lower-carb lifestyle, there are a few ways to achieve that fantastic consistency without using them at all.
We’ll talk about the best thickeners and a few other tips in this blog before the recipe card, but if you have it all under control and start cooking!
How To Thicken Keto Puddings
Thankfully there are a few ways to thicken puddings without adding an unwanted amount of carbs. I’m not a fan of some thickeners like Glucci or adding a lot of Xanthum Gum, so I try to limit those in my recipe to only tiny amounts.
So to do that I’ve found a way to use whole ingredients that I have on hand all the time to thicken my puddings and pie fillings.
The first swap out in this recipe is that we will be using heavy cream instead of whole or skim milk. Not only does this give the pudding such a rich and creamy mouth feel, but it will also help in the thickening of the finished product.
Along with the heavy cream, egg yolks, and plain unflavored gelatin will be all you need to have the perfectly creamy and thick Keto Vanilla Pudding.
What is the Best Gelatin To Use For Keto Puddings?
When it comes to using gelatin in your desserts to thicken them there are a few things that are helpful to keep in mind.
There are many types or brands of gelatins out on the market and trust me, they are not all created equal. Some will have a more powerful thickening strength than others out there.
The firmness or final thickness will depend on which brand you use and how long you let your pudding chill.
Just remember, we are not making firm jello, so you won’t need as much gelatin for this pudding as you would with a very firm jiggle.
Typically, you’ll need a couple of teaspoons for the perfect soft pudding texture.
For this recipe over the years, I’ve tried two different brands. One brand I’ve tried is the Knox brand plain unflavored gelatin found at most grocery stores here in the United States.
This brand comes in a small box with a few small packets of gelatin in the box. Each packet will have a few teaspoons of gelatin each. So one packet would be all you need for this recipe.
The Knox brand works fine if that is all you can get or have on hand. But I prefer to buy my gelatin in bulk form so I have it on hand.
I also enjoy the bulk forms because I can make sure it is a grass-fed beef gelatin, which has more health benefits.
This is the current brand I’m using and it has a nice setting powder and gives this pudding a good consistency without adding any flavor at all.

How to Store Homemade Pudding
Do you have leftover pudding you need to save for later? With my bunch here at the house, I rarely have leftovers for long, but when I do they are simple to store away for later.
To store pudding in your fridge, place it in an airtight container and cover it with plastic wrap. Refrigerate for up to a week.
How Long Will Keto Pudding Last in The Fridge?
If you store pudding in the fridge it is good for about 1 week. I would not recommend eating your pudding beyond ten days.
After about a week the gelatin will start to lose some of its thickening power so the pudding may start to get thinner or watery.
Also, the fresh ingredients like the cream and eggs will not be at their peak any longer so it is best to finish it off in that first week if possible to make sure you enjoy every last bite!
Ways to Use Keto Vanilla Pudding
You may be wondering what are some ways you can use this basic Keto Vanilla Pudding besides just enjoying it as a snack or dessert after dinner, so I thought I’d share a couple of ways I’ve used it in the past.
- Triffles – This pudding makes a great addition to any low-carb or keto triffle. The thick and rich vanilla pudding works as a delicious addition between each layer of your favorite Keto Cake and whipped cream. This is such a treat and it would make the perfect special dessert!
- No-Bake Cream Pies – I love a good no-bake pie, don’t you? If your answer was yes, you’ll be thrilled to know that this pudding is a great base filling for a no-bake pie. The only thing I would recommend is that you may want to add a little more gelatin when you are making the pudding so it will set up a little more firmly and make a more sliceable pie when you are ready to serve. But this pudding would be perfect.
- Parfaits – “Who doesn’t love a good parfait?” Right? I know I sure do and this pudding is delightfully layered between whipped cream, fruit, or your favorite Keto cookie crumbles. It is as simple as layering in some pudding, a topping of choice, whipped cream, and more pudding. These parfaits are similar to the triffles we already mentioned but they are typically served in small cute portioned cups that make them easy to serve to guests. Kind of like the serving vessel you see in my pictures here in this pudding post.
No matter if you choose to make one of these fancier suggestions or if you just take a spoon and eat the pudding straight out of the bowl you chilled it in, one thing is for sure, you’re going to love it and want to make more!
Keto Vanilla Pudding
This basic vanilla pudding is soft and creamy. You can eat it as is, top it with some berries and whipped cream, or use it for a no-bake pie filling. No matter how you eat it you'll love it.
Ingredients
- 2 cups of heavy whipping cream
- 1 cup of water
- 1/ 3 cup of THM Super sweet (or 1/2 cup Pyure)
- 3 large egg yolks
- 2 teaspoons of vanilla
- 2 teaspoons of unflavored gelatin
- 1/2 teaspoon of Xanthum Gum
- pinch of salt
Instructions
- Add the heavy whipping cream (double cream in some areas), water, sweetener, egg yolks, and salt to a saucepan.
- Wisk everything until well blended. Then turn the burner on medium-low and slowly bring the mixture to a very light simmer. Whisk constantly so it doesn't burn or scramble the egg yolks.
- Slowly sprinkle over the gelatin on top of the cream mixture then whisk to combine. Do the same with the Xanthum Gum.
- Let the mixture cook until it starts to thicken and remove it from the heat. The pudding will be very, very loose at this stage.
- Carefully pour the vanilla pudding mixture into a bowl and let it cool completely.
- Then cover the pudding and refrigerate for 4 to 6 hours or until the pudding is set to your desired thickness.
- Serve cold with option topping or whipped cream if desired.
