Hot, Gooey, and Delicious!
My Hot Reuben Dip has all the classic ingredients of the iconic deli favorite! The best Reuben sandwiches are a delicate balance of tender corned beef, swiss cheese, the tang of sauerkraut, and then, of course, the traditional Thousand Island or Russian Dressing.
Yum! I knew that this list of ingredients would make an amazing dip too.
This easy dip recipe is the perfect dip for your next party or gathering! It is so amazing served with crunchy raw veggies or some of your favorite low-carb crackers.
I also love serving it with some low-carb toasted croutons like these pictured with my dip. I made these from My Montana Kitchen’s Roll Recipe.
I have always been a huge fan of sandwiches and the Reuben is a favorite of mine. I like that you can serve a Reuben cold or my favorite way, warm with the cheese melted and dripping down the sides!
I have found ways to continue my love affair with sandwiches, even though I follow THM and low carb eating, thanks to all the amazing low carb bread recipes out on the web, but for this recipe, there is no bread required!
There are only a few ingredients needed to make my Hot Reuben Dip and none of them are hard to find or overly complicated. This dip is so simple yet so flavorful it is sure to be your go-to for your next party invite.

- Corned Beef
- sauerkraut
- cream cheese
- mayo
- Low Carb Thousand Island Dressing
Honestly, I think my favorite part of a Reuben sandwich is the Thousand Island or Russian Dressing. I love the sweetness with the tang of the sauerkraut.

If you’re not a fan of this type of dressing then please don’t skip this dip based on that, it is easily left out and replaced by a little more mayo. The taste is still amazing!

Keto Hot Reuben Dip
A fantastic hot dip with all the traditional flavors of a Reuben Sandwich. This dip is great served with low carb crackers or raw veggies.
Ingredients
- 8 ounces of softened cream cheese
- 2 cups of shredded Swiss Cheese
- 1/2 cup of mayo
- 1/2 cup Low Carb Thousand Island Dressing
- 12 ounces of drained and rinse suarkraut
- 1 1/2 cups of chopped Corned Beef
- 2 tablepsoons of minced onions
- 1 teaspoon of garlic powder
Instructions
- In a large bowl add all of the ingredients, except 1/2 cup of the Swiss, then mix well.
- Add the dip mixture into an oven-safe baking dish and top with the remaining cheese.
- Bake for 30-35 minutes or until the dip is warmed through and the top is nice and golden brown.
- Serve hot with low-carb crackers and veggies for dipping.

Hi! This looks amazing! Did you just take Montana’s Kitchen roll recipe and put tiny pieces on a baking sheet in the oven to make them be croutons?

Hi Jami! I use the Diet Doctor’s versions of the rolls, but yes I believe Sarah adapted her from their recipe, so her rolls will work great as well. I think basically the main difference is she uses THM Baking Blend and he using almond meal with other minor changes here and there so either will work. I hope you like the dip if you try it.
