Easy Mixed Nut Clusters
My Easy Low Carb Nut Clusters are the perfect chocolaty treat that has a perfect balance of sweet and salty. They are easily made at home in just minutes and a lot cheaper than purchasing already made!
Like other homemade treats, these nut clusters are delicious and they make a great holiday treat to give to family and friends.
Include them in your Christmas tins or on a party platter with cookies, brownies, and holiday candy. Check out my dessert recipes for other homemade chocolatey goodies.
Should I Roast The Nuts For These Candies First?
If you want to give the nut clusters a deeper nutty flavor, highly recommend toasting the nuts in the oven prior to chopping them up for this recipe.
It is simple and there are no oils necessary for this task. Just spread out the nuts in an even layer on your baking sheet and then place them in a preheated 350-degree oven.
Roast them for about 8 to 10 minutes, making sure to watch them carefully so they don’t burn. I like to mix them around on the baking sheet about halfway through the roasting time.
This helps them roast evenly. Once they’re done, make sure to remove them from the baking sheet so they don’t continue to cook from the residual heat.
They also need to be cooled before you start this recipe, so make sure you let them set out and cool down completely before mixing them in your chocolate.
If you want to skip this roasting step you can buy nuts that are already roasted or just use the raw nuts as they are if you don’t want the roasted flavor.
What Is The Best Low Carb Chocolates To Use For Candy Making?
When it comes to the chocolate coating for these nut clusters my favorite is ChocZero Milk Chocolate Chips, but you can definitely modify these to your favorite variety.
The word of sugar-free chocolate chips has come so far you guys. In most Walmart stores these days you can find a couple of different brands on their baking aisles.
You can find milk chocolate, dark chocolate, and even white chocolate. Not to mention specialty flavors like peppermint, pumpkin spice, and mint. Any of those flavors would work great with these easy nut clusters.
The trick with sugar-free chocolate chips is melting them slowly and getting them smooth without overcooking them. I find that some brands melt easier and better than others.
Here are some brands I’ve used and enjoy:
- ChocZero – These are the newest chips I’ve worked with and so far they are one of my favorites I must say. They taste amazing and they melt with the coconut oil fantastically. They also make a great ganache when melted with warm heavy cream. They are awesome as the chocolate center in my Chocolate Drop Shortbread Cookies. They also have a white chocolate variety! The only hangup with these is that I can’t find them locally, so I have to order from Amazon or their direct website.
- Lily’s Chocolate Chips – I’ve used this brand for years now. They melt pretty well and a bonus is that I can get them locally at Kroger, Walmart, or our little independent health food store. Although they melt well, they can be temperamental if you aren’t careful when melting them. But they taste amazing and you can get tons of flavors such as mint chocolate, peppermint, white chocolate, milk chocolate, dark chocolate, and one of my favorite salted caramel flavors that I use in these yummy Salted Caramel Pecan Cookie Bars!
How Long Can I Store These Easy Nut Clusters?
These nut clusters are great treats to make ahead of time and they are easy to store. If you store them correctly they can last quite a while.
Here are a few tips and tricks for storing the nut clusters to ensure they last as long as you need them to.
- Counter Top Storage: If you are wanting to make these ahead of the holiday you are serving them at, or if you want to make a batch to last your a while, you can mix them out and leave them out on the counter up to a week before they need to put into the fridge or freezer. The older they get after a week on the counter the flavor may start to be affected, and you don’t want that. Also, if you keep your home very warm these Easy Low Carb Nut Clusters may start to melt, so go with the next options for storing them.
- Refrigerated Storage: Store Mixed Nut Clusters in an airtight container in the refrigerator for up to 2 weeks. I like to layer the nut clusters with pieces of parchment paper between each later so they don’t stick together over time.
- Freezer Storage: Make sure the clusters are completely set and firm before you move them to the freezer. This way they won’t stick together or fall apart when moving to the storage container. To freeze thee, simply let them set then place them in an airtight freezer-safe container or storage bag. They’ll last up to 3 months in the freezer this way.
Variations For These Easy Low-Carb Nut Clusters
- Nuts: It’s easy to customize nut clusters using whatever nut combination you love. My favorites are hazelnuts or macadamia like those used in this recipe but you can certainly use any of your favorites.
- Toppings: I love topping mine with a nice flakey salt like this Add a drizzle of caramel or melted peanut butter on the top and sprinkle a touch of sea salt to finish them off.
- Chocolate: The recipe is made with some sugar-free milk chocolate chips but you can use dark chocolate, a good low-carb white chocolate, or even a mix of a couple. White chocolate would be delicious drizzled over the top of the milk or dark chocolate and it would be a beautiful presentation for the candies as well.
- Mix-Ins: If you want to add more flavor or a variety you can add in some toasted unsweetened coconut or things like sunflower or pumpkin seeds.
- Fruit: Mixing in dried fruit like cranberries or even raisins will give this nut cluster recipe a gourmet candy shop feel and they are delicious this way. Just know that adding the dried fruit will for sure add carbs, so look for the no-sugar-added dried fruit if this is something you want to try.
- Vegan/Dairy-Free: If you need to make these vegan or dairy free, you can use your favorite dairy-free chocolate melting chocolate for these Easy Nut Clusters.

Easy Low Carb Nut Clusters
These easy sugar-free chocolate-covered nut clusters are the perfect holiday candy with a great balance of sweet and salty.
Ingredients
- 7-8 ounces of sugar-free Chocolate Chips (I love ChocZero)
- 2 tablespoons of coconut oil
- 1 3/4 cups of raw hazelnuts or macadamia nuts (or a mix of both!)
- Flakey Salt for the tops (optional)
Instructions
- In a microwave-safe bowl, combine the chocolate chips and coconut oil and microwave until the chocolate is melted. I do this in 30-second intervals stirring in between.
- White this mixture if melting line a banking sheet with parchment paper and set aside.
- Once the chocolate chips and oil are melted and smooth, add the nuts to the melted chocolate and combine well until all the nuts are coated completely.
- Once mixed, take a spoon and drop the chocolate and nut mixture in large spoonfuls onto the parchment paper. Be sure to space them out enough so they don't stick to each other.
- If adding the flaked salt do this by sprinkling a few flakes on top of each cluster while they are still wet.
- Let the Easy Low Carb Nut Clusters set until they are hardened. You can put them in the fridge also to help speed this along if you want to.
