How To Make Healthier Fudgesicles
I remember as a kid, and even now as an adult, I love a good fudge popsicle. But of course, now I try to avoid tons of additives and all the sugars in store-bought ice creams and fudgesicles.
So I’ve created some that are a healthier version of the ones we all know and loved from our childhood.
To convert non-sugar-free ice cream or popsicles like these you only need to make a few ingredient swaps to have a rich chocolate flavor and cool treat without all the carbs.
I also wanted to keep mine on the lighter side of calories and fat as well but if you are looking for higher fat and calories, or you don’t track those don’t worry. I have some tips at the end of this blog post that will help you up those macros if that’s what you need for your diet plan.
I used plant-based milk, almond milk, and cottage cheese as my base for these Fudgesicles, which are two common ingredients in our home, and I know a lot of you will have access to these as well.
These two ingredients are lower in carbs but add in some protein so they are a great way to get an ice cream base that can be modified for tons of possibilities.
For these Easy Keto Fudgesicles, you’ll only need two more ingredients or three if you want to throw in some vanilla.
So if you have cottage cheese, almond milk, a sweetener you prefer, and a good quality unsweetened cocoa powder you are on your way to making these simple and delicious fudgesicles.
All you’ll need now is the perfect popsicle mold and you can whip these up and enjoy them. They are my favorite sweet way to beat this nasty summer heat!
What Is The Best Popsicle Mold For Keto Popsicles?
With so many possibilities out there on the web and in kitchen stores, finding the best popsicle molds is so easy.
But at the same time, if you are like me having that many great options can also be overwhelming.
I mean having that many choices means having to take the time to research which ones are better or buying several and testing each out until you find your favorite.
Which is what I did so you wouldn’t have to. I’ll share with you here which popsicle mold finally won me over and is not my go-to mold!
Years ago I had some plastic ones that came from a local retailer that worked okay I guess. They held liquid just fine and then froze perfectly.
However, I always struggled to get the popsicles out unless I ran the mold under warm water. This worked okay, so if you have plastic there is a tip for you.
The plastic ones I had eventually gave in to the stress of freezing and the expanding liquids and ended up cracking and had to be thrown away.
About a year or more ago, I tried silicone molds and they stole the show right away!
These molds are easy to fill and use and are made to flex more so they don’t have a problem expanding in the freezer over and over through the years. Meaning no cracking or breaking like the plastic ones can.
The most impressive reason that I prefer a good silicon mold over plastic is that they are a breeze when it comes to removing your Fudgesicles.
They really just slide right out and you don’t have to struggle at all and I’ve never once had to wet them with warm water to get my creations out.
As long as your Easy Keto Fudgesicles, or any of your sweet creations, are completely frozen, you’ll have no problem pulling them out of the silicone mold without stress.
It took a little trial and error and a few different headaches, to learn now that I’m a solid fan of the silicon molds. These types of molds are also super easy to clean after use.

Tips and Variation Ideas For These Easy Keto Fudgesicles

- Use a good quality popsicle mold. This recipe will make 11 to 12 nice-sized fudgesicles so a larger mold with more wells to fill is key. Silicone molds are perfect for easy removal when they are frozen.
- Have all your ingredients and tools, like your popsicle mold and sticks, handy so you’ll be able to mix these up and get them into the freezer quickly without stress.
- Choose a nice quality unsweetened cocoa powder. When chocolate is the main ingredient or flavor producer high-quality chocolate makes a big difference.
- If you have a nut allergy the almond milk can be swapped out for soy, oat, or any of your favorite plant-based milks.
- If you prefer a more calorie and fat-dense popsicle you can replace the almond milk with heavy cream to get a very decadent popsicle. Keep in mind this will change the nutrition drastically, including adding a few carbs.
- If you would like a little twist on your flavor try adding some peanut butter powder or natural peanut butter to have a play on a Reese Cup flavor. You can start by adding about 1/4 to 1/3 cup of peanut butter powder. Again, keep in mind this will add some carbs and other macros.
- Let the Easy Keto Fudgesicles freezer completely before trying to remove them from your molds. If you don’t have a silicone mold that makes it easy, you can try running your mold carefully under warm water to loosen the popsicles a little.
- To store the fudgesicles you can leave them in the mold and just pull them out when you want to enjoy one, or you can remove them all from the mold and store them in a freezer bag. They will keep for many months in the freezer, but ours are gone in just a day or two!

Easy Keto Fudge Pops
These delicious chocolate fudge pops are a great Summertime treat that won't leave you feeling overloaded with sugar.
Ingredients
- 2 cups of Unsweetened Almond Milk
- 1 cup of Full Fat Cottage Cheese
- 1/4 cup + 1 Tablespoon of THM Super Sweet (or your favorite Erythritol Bend)
- 1/3 cup of Unsweetened Cocoa Powder
- 1 teaspoon of Vanilla
Instructions
- Add all the ingredients into a high-powered mixer and blend thoroughly until the mixture is very smooth without any lumps of cottage cheese remaining.
- Prepare your popsicle mold and sticks
- Slowly fill your popsicle mold with the Easy Keto Fudgesicle mixture and add the lid and popsicle sticks.
- Freeze until solid. Mine usually takes about 8 hours in the freezer to be firm.
