Cream of Chicken Soup
A creamy and rich homemade version of the condensed Cream of Chicken Soup. It is great as is served with crusty bread or mixed in with your favorite casserole recipes.
Ingredients
- 6 tablespoons of salted butter
- 6 tablespoons of unbleached flour
- 1 1/2 cups of low sodium chicken stock
- 1 cup of heavy whipping cream or milk of choice
- 1/2 cup of canned chicken breast, optional
- 1 teaspoon of poultry seasoning
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- salt and pepper to taste
Instructions
- In a medium saucepan, add the butter and place it over medium heat. Add in the chicken if you are using it.
- Sprinkle in the unbleached flour and stir it into the cooked chicken. Add in the spices and mix them to combine them with the flour. Stir constantly so the flour doesn't burn.
- Slowly, mix in the chicken stock and the heavy cream and whisk to combine.
- Simmer the Cream of Chicken Soup until it has thickened nicely. At this point, you can salt and pepper to your desired taste.
- Once the soup is thickened it can be eaten, added it to a casserole recipe, or cooled completely and stored away in the fridge for up to one week.
