This Cream of Celery Soup is so rich and creamy. With all the wonderful flavor it will make a great bowl of soup on a cold winter day.
It also is a fantastic replacement for those store-bought cans of condensed soups in your favorite casseroles popular during the holidays.

Cream of Celery Soup
This homemade thick and creamy Cream of Celery Soup is great for any cooler fall day or mixed into your favorite casserole. It's a great way to replace the store-bought cans of condensed soups.
Ingredients
- 6 tablespoons of salted butter
- 6 ounces of celery, chopped small
- 6 tablespoons of unbleached flour
- 1 1/2 cup of low sodium chicken stock
- 1 cup of heavy whipping cream or milk of choice
- 1 teaspoon of celery seeds
- 1/2 teaspoon of garlic powder
- salt and pepper to taste
Instructions
- In a medium saucepan, add the butter and place it over medium heat. Add in the chopped celery once it is melted. Sprinkle with a dash of salt. This will help it release its moisture so you can cook it out.
- Saute the chopped celery until they have released all the excess water and it has cooked out.
- Sprinkle in the unbleached flour and stir it into the cooked celery. You will want to cook the rawness out of the flour which will take a couple of minutes. Stir constantly so the flour doesn't burn.
- Add in the chicken stock and the heavy cream and whisk to combine. Add in the pepper, celery seeds, and garlic powder. Stir well.
- Simmer the Cream of Celery Soup until it has thickened nicely. Now you can taste the soup and adjust any seasonings to your liking.
- At this point, you can eat the soup, add it to a casserole recipe, or let it cool and store it in the fridge in an airtight container until you want to use it.
