We all have those family favorite casseroles like Green Bean Casserole that call for those storebought cans of condensed soups, right?
I avoid buying these processed and in cans as much as we possibly can so I’ve learned to make these cream of soup at home.
This Cream of Mushroom is my favorite and it is so delicious as a stand-alone meal with homemade bread or crackers, but it is perfect for those casseroles we all love.
This recipe makes about two cans worth of condensed soup.
Cream of Mushroom Soup
This Cream of Mushroom soup is a great homemade version of those store-bought cans of condensed soups, just without all the additives. It is great for casseroles and for stand-alone meals.
Ingredients
- 6 tablespoons of salted butter
- 8 ounces of mushrooms, chopped
- 6 tablespoons of unbleached flour
- 1 1/2 cup of low sodium chicken stock
- 1 cup of heavy whipping cream or milk of choice
- 1 teaspoon of garlic powder
- salt and pepper to taste
Instructions
- In a medium saucepan, add the butter and place it over medium heat. Add in the chopped mushrooms. Sprinkle with a dash of salt. This will help them release their moisture so you can cook it out.
- Saute the mushrooms until they have released all the excess water and it has cooked out.
- Sprinkle in the unbleached flour and stir it into the cooked mushrooms. You will want to cook the rawness out of the flour which will take a couple of minutes. Stir constantly so the flour doesn't burn.
- Add in the chicken stock and the heavy cream and whisk to combine. Simmer the Cream of Mushroom Soup until it has thickened nicely. At this point, you can salt and pepper to your desired taste.
- At this point, you can eat the soup, add it to a casserole recipe, or let it cool and store it in the fridge in an airtight container until you want to use it.
