One of my dear friends asks me a while back if I ever had bad days in the kitchen. She said that she loved my cooking and bet I never had a recipe fail. Ha, I just laughed as I recalled a few recipe fails that had happened just the week before we were having lunch together.
Looking back at those fails, some cause me to giggle but oh boy, there are some that make me CRINGE when I think back to them! I won’t subject you guys to all of my recipe bloopers right now, but just to give you an idea of how bad somewhere, just imagine my waffle maker smoking and a mess on my machine that took my husband days to get clean, okay more like a whole week!
But who’s counting…..right?
Yeah, bless him! He is such a sweetheart, he is my biggest supporter, my amazing dishwasher, and the love of my life. He graciously tackles dish detail in our home daily. And trust me here you guys, taking on a food bloggers kitchen is no easy feat.
Some weeks are filled with a bottomless sink of dishes at all times around here! Those days of working on recipes or meal prep for our busy days keep my poor guy filling that dishwasher several times a day!
But he enjoys it when I pay him with the finished plate of food or a special treat, so I try to make sure I have his favorite sweet treats on hand at all times.
Thankfully, this Cheesy Chicken Florentine was a recipe gone wrong, turned out to be something delicious and it quickly became of my family’s favorite casseroles.
Back when I first made this casserole, in 2015 for the blog, it was destined for something TOTALLY different. However, when I got halfway through the cooking process I realized that I had forgotten to buy two main ingredients for the recipe I had planned!
So that recipe got scratched and this Cheesy Chicken Florentine was created. Don’t you love recipe fails that turn into big wins!
This delicious casserole finds its spot in my Simple Supper Series because it only has basic ingredients in it and it is extra easy to put together and bake.
With the chicken and the spinach, you get your protein and veggies in the same casserole and one-dish meals have always won a spot on my favorites list. I hope you and your family will give it

Cheesy Chicken Florentine || Low Carb
A creamy chicken and spinach casserole that is filling and packed with protein. A great comfort food dinner for any night of the week.
Ingredients
- 8 ounces of softened cream cheese
- 4 cups of cooked shredded chicken
- 10 ounces of frozen spinach, thawed and drained very well
- 2 large eggs
- 1 1/2 cups of chicken stock
- 1 teapsoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons of dill
- 1 cup of shredded cheese of choice
Instructions
- Add the cooked and shredded chicken to a large bowl and set aside.
- Next, remove all the excess water from the spinach and add and the chopped onion to the shredded chicken.
- To begin the cream sauce add all of the remaining ingredients except the shredded cheese to a blender and blend until completely smooth.
- Pour the blended cream sauce over the chicken and spinach mixture and stir until all combined.
- Lastly, add the Chicken Florentine to a large casserole dish and top with the shredded cheese.
- Bake the casserole for 35 minutes covered at 375 degrees.
- After 35 minutes remove the cover and cook an additional 10 minutes to brown the cheese on top.

Is it really 3 pounds of chicken? Sounds like a lot.
Yes, it is but it makes a very meaty casserole. If you want to use less maybe do 5 to six cups of shredded chicken. It’s been a while since we had this one for dinner, so I’ll remake it soon and add some updates.

What ingredients did you miss? I made something similar today and it turned out sweet! Ugh…I am so unhappy because the rest of it looks amazing. My recipe called for 10ml of a sweetener which I thought was weird but I went with it. Now I feel like it’s totally ruined 🙁
Oh no Elena, I am sorry about your other recipe! The original recipe I was going to make that night had a red sauce like a pasta sauce but I forgot to get it at the store that night and ricotta cheese, so I improvised with what was in my pantry, and this recipe come to life. I can’t imagine having sweetener in it either, that does sound a bit odd. It is always a bummer when recipes don’t go as we had hoped, right? I hope you enjoy this recipe if you decide to give it a try.

Since recipe says shredded chicken, I assume that means you’ve already cooked it first?

Is the three cheese sauce a white sauce or marinara
A white sauce. You can also make a simple Alfredo sauce at home and use that as well if you can’t find a sauce with the lower carb count.
