Making These Mini Cheesecake Bites
When it comes to dessert recipes I usually try to stick to simple yet delicious recipes during most weeks. Between work and homeschooling, I don’t have a lot of extra cooking.
On occasion, I will make an exception, and make one of the more detailed or time-consuming recipes you can find here on the blog like my Japanese Style Cheesecake or a yummy ice cream.
But most of my treats for the family are simple things like these Keto Caramel Pecan Cheesecake Bites. I know I just said I didn’t have time to make a cheesecake very often, but this is just a quick version.
In fact, these cheesecake bites do not require any cooking at all, well except the Low Carb Caramel Sauce, which needs to be made ahead of time.
You can find that caramel recipe linked in the recipe card below. Don’t worry, it is an easy caramel recipe that even a beginner can do!
Even though the recipe does take some planning ahead, it still only takes about 20 minutes of actual cooking time for that caramel. The rest of the time is mostly chilling time.
So once you have your caramel ready to go, these little dessert bites come together super quickly and you’ll find that truly the hardest part is just waiting for them to chill and set.
The ingredients are all very simple and all found on the baking aisle at your local supermarket like Walmart or Aldi.
For the cheesecake filling you’ll just need a block of room-temperature cream cheese, some sugar-free caramel sauce, and a sugar substitute of your choice.
Then the only thing needed for the coating that you roll these bites in is the chopped walnuts. See, you really can’t be much simpler.
Can Caramel Be Low Carb?
If you are new to Keto or sugar-free desserts, you might ask yourself if is it possible to make a thick rich caramel Keto. The short answer is yes, it totally is!
For years as I was practicing and learning how to bake and cook without sugar I tried out many sugar replacements and in my journey to find a sugar-free caramel I found that not all sweeteners are created equal in a caramel recipe.
Many of the sweeteners that low-carb and keto dieters use contain Erythritol and stevia so that is naturally where I started my experiments.
These are great for baking cookies and cakes, but I found out quickly that they are not ideal for reaching and maintaining that creamy consistency that caramel is known for.
The erythritol starts off strong in the cooking process and tastes decent but where it falls short is as the caramel cools and you store it in the refrigerator the caramel will start to get grainy and lose the nice smooth texture and consistency you worked so hard to reach while cooking it.
So this is where a sweetener named Allulose comes in. If you are new to Allulose you can find more information here.
The allulose works perfectly in my Caramel Recipe! It is tasty, it caramelizes, and most importantly it allows the caramel to stay creamy and super smooth once it is cooled completely
My caramel recipe is the best when it comes to all your caramel needs. It even stays perfectly smooth and not grainy as it stays in the fridge.

How To Store Cheesecake Bites
Once these cheesecake bites have been rolled in the nuts you can easily store them in the refrigerator for snacking throughout the week.
To keep them fresh you will need to store them in an airtight container such as a Pyrex dish with a lid or a nice thick ziplock bag.
They will remain fresh and perfectly delectable for up to a week. Any longer than that I highly recommend you place them into a freezer bag and keep them frozen until you are ready to eat them.
When you are ready to eat the frozen bites simply remove them from the freezer and place your desired amount on the counter and let them come to thaw for just a few minutes.
This won’t take very long since they are small. You can also pull them out and place them in the fridge to let them thaw slowly if you aren’t wanting to devour them right away as we usually do!
Recipe Variations for These Caramel Pecan Cheesecake Bites
The caramel and pecans are one of my favorite combos for these little dessert cheesecake bites, but if you are not a fan of that combo or say you didn’t want to make the low-carb caramel you can use some of these tips to modify the bites to your liking.
Use Peanut Butter: If you want to swap out the flavor profiles on these Caramel Pecan Cheesecake Bites you can leave out the caramel and use some natural peanut butter or peanut flour. This will increase the carb count of each bite overall but it will also add some extra protein to them, so it’s a great nutritional option if you don’t like caramel or just want to make some variety.
Use Almonds: Not a fan of pecans? That’s totally okay and an easy fix but swapping the pecans out with chopped almonds, peanuts, or macadamia nuts.
Really any nut you prefer would work for the outer coating. I like to experiment and use a couple of different ones here and there to change the flavor up now and then.
You can also toast the nuts if you don’t mind a few extra minutes of cooking. This will really bump up their natural flavors.
Nut-Free Option: For those that have a nut allergy I suggest rolling the caramel cheesecake bites in some sugar-free chocolate chips like Lily’s.
Just chop about 1/3 of a cup of the chips up and gently roll each little bit in the chips to coat. This is a delicious variation that will also add some carbs, but not a ton, so a totally yummy swap!
Cocoa Powder Coating: Another fantastic coating option is a light dusting of cocoa powder. Be sure to use the unsweetened cocoa powder you find on the baking aisle of your supermarket.
I highly recommend looking for a good quality duct processed powder. This makes a big difference in the overall flavor of the cocoa powder.
Caramel Pecan Cheesecake Bites
These decadent desserts feature super easy caramel cream cheese mixtures rolled in toasted pecans. These are the perfect one-bite treats that make great party appetizers too.
Ingredients
- 8 ounces of very soft cream cheese
- 3-4 tablespoons of this Keto Caramel
- 1/2 cup of toasted pecans, chopped fine
- 1 tablespoon of powdered Monk Fruit Blend, optional
Instructions
- It is important to make the Keto Caramel at least the day before you want to make these cheesecake bites. The caramel needs to chill overnight or for many hours to set up.
- When ready to mix the recipe up add the very soft cream cheese to a mixing bowl and add in the chilled and thick caramel. Start with 3 tablespoons and mix it up thoroughly.
- Taste the cream cheese mixture. If you want it to be sweeter or have more caramel flavor add another tablespoon of caramel. You can also add some of your favorite powdered sweeteners if you want it even sweeter. Just start with a little at first and adjust if needed.
- Use a small 1-tablespoon cookie scoop to scoop out portions of the caramel cheesecake mixture onto some parchment paper. Cover and chill for at least 2 hours until they are firm enough to shape and roll in the chopped pecans.
- While the cheesecake bites are chilling toast the pecans and let them cool completely.
- Roll the chilled cheesecake bites in the palm of your hand lightly to shape them into more of a round shape. Roll them in the chopped pecan pieces.
- They are ready to serve. Keep these in the fridge in an airtight container.

Hi Rebecca, I’m not quite sure about this question. If you are asking if you can buy a sugar free caramel because you don’t want to make the caramel recipe for these cheesecake bites, then yes, you can purchase any caramel you think would work best for your needs and just use that in this recipe.
I’m interested in trying this but I just want to be clear, that the caramel sauce is being made with the POWDERED allulose sweetener that your link takes me to?
I’ve used powdered and granulated in my caramel sauce without issue.
