Now, you may not know this about me, but I am NOT a fan of summer you guys, never have been, and never will be. The heat is not my friend!
But while these southern summers are a dreaded time of year for me, I will begrudgingly admit to a couple of things that I do enjoy during the summer.
For starters, I love to swim and spend time with my family in the pool (notice, I said pool, no lakes for this girl).
There is nothing like hearing the laughter of my little guy while we are splashing around catching some rays. Ah, sweet music to my soul!
So next to swimming, I also love all the fresh veggies that grow in our area during these hot months.
The fact that the farmer’s markets are so abundant with organic food for great prices makes my mouth and budget happy.

This year we are loving all the yellow squash, zucchini, onion, and tomatoes that we are buying.

The meat you see is also grass-fed organic beef that we are lucky enough to buy from a local farmer too, but any ground protein would work well too.

Making The Beef & Veggie Skillet
I called this recipe a Beef and Veggie Skillet because it is a recipe that is finished in one of my big skillets and because I like it easy, I serve it family-style in that same skillet.
Although I call it a skillet meal it doesn’t all start in the same skillet as some one-pot meals do. But I have a reason behind that!
You see, I am lazy! Okay, not lazy, but I just found an easier way to do the veggie part of this skillet recipe, that saves me a little time.
Any time I can reduce the time I have to stand in front of the stove is my friend.
So I roast my chopped veggies in a bit of oil and season in the oven before adding them to the skillet of cooked ground beef and noodles.
If you want this dish to truly be a ” one-skillet meal” then you would need to cook the ground beef in the skillet and set it aside, cook the veggies in the same skillet then combine it all and serve.

What Are Ancient Wisdom Noodles (Konjac Noodles)?
Konjac noodles also referred to as Miracle Noodles, are a fantastic kind of noodles for pasta lovers who crave noodles but need to avoid gluten or high carbs.
We’ve been eating them for years in our home, and love them. I purchase them from a brand called Trim Healthy Mama and you can shop for them here if you would like.
These noodles are made from the flour of the konjac root, which is almost free of carbohydrates and very low in calories. Not to mention they are totally gluten-free.
Konjac noodles could be the secret to shedding weight while still enjoying your favorite pasta recipes. Just substitute these for any noodles and enjoy.
Tips and Tricks for Cooking Konjac Noodles
- Open a bag of noodles in a colander and rinse thoroughly with cool water for one minute. It is important to rinse these types of noodles to free them from any odor or residue left from the water they have been packaged in. This will make a huge difference.
- These are long noodles, but I like to cut my noodles with kitchen shears or chop them to make the pieces easier to each and chew after the recipe is prepared. This is of course totally optional.
- This next tip will really help with the texture of the noodles before you use them in the recipe. After you rinse them drain them really well and then add all the noodles to a nonstick pan on medium heat until dry. You can also steam them in a steamer basket as well if you prefer. I’ve done it both ways and each works fine.
- Add the noodles to any recipe, like this Beef & Veggie Skillet, and enjoy!
Variations For This Recipe
With this skillet meal, there are variations that would work amazingly well. If you don’t like the squash that I’ve put in the recipe, swap it out for your favorite veggies.
Some other fresh veggies that will keep you on the low-carb side are asparagus, bell peppers, broccoli, cabbage, cauliflower, and radish.
If you’d like to add more healthy carbs to them you could use veggies such as carrots, sweet potatoes, corn, butternut or acorn squash, more onions, and parsnips.
Can I Use A Different Noodle In This Recipe?
The long answer made short, yes, sure you can. If you are not a fan of the noodles in this recipe, you could exchange them for any low-carb or gluten-free pasta you and your family prefer.
One pasta I’ve fallen in love with recently is the Palmini Noodles which are made with the heart of a palm. There are also low-carb and gluten-free options for pasta that is nutritious and very easy to prepare.
I know they would work deliciously in this recipe because they will take on the flavors of all the other ingredients they are cooked with.

Beef & Veggie Skillet
This deliciously healthy skillet meal features juicy ground beef, fresh veggies, and a low-carb noodle alternative. This recipe is easy and quite filling.
Ingredients
SKILLET SEASONING
- 2 teaspoons of Italian Season
- 1 teaspoons of garlic powder
- 1 teaspoon of onion powder
- 1/2 teaspoon of salt
VEGGIES & BEEF
- 2 tablespoons of oil
- 1/2 of a medium onion, chopped
- 1 pound ground beef
- 2 small zucchini, chopped
- 2 medium tomatoes, diced
- 1 small yellow squash, chopped
NOODLES
Notes
- First, mix all the Skillet Seasonings in a small bowl and set aside for later.
- Chop up the zucchini, tomatoes, and yellow squash. Place them on a large baking sheet and add the remaining one tablespoon of oil over the veggies
- Next, add half of the dry seasoning and toss the veggies in the oil and seasonings.
- Spread them evenly on the baking sheet and bake the veggies for 40 minutes in a preheated 350-degree oven. The veggies need to be tender but not mushy.
- When the veggies are tender remove them from the oven and cover them while you cook the ground beef in a large skillet.
- Add the other tablespoon of oil to a large skillet over medium heat, then toss in the chopped onions, ground beef, and the remaining half of the seasoning mix.
- Cook until the beef is done and the onions are tender. Remove from the heat and drain the drippings from the pan if the beef released any.
- Add the roasted veggies to the skillet with the ground beef. Stir until all combined.
- Turn the heat on low under the skillet.
- Drain the noodles and rinse well. Place the drained noodles on a cutting board and chop them into bite-size pieces. You can leave them whole if you would like.
- Add the noodles to the skillet and cook until everything is heated through.
- Taste and adjust seasoning to your tastes as needed.
